Meatball Sub

Someone gave me a couple packages of a soup mix that called fir crushed tomatoes. I bought the bigger can (because I'm frugal?) and wanted to use the rest somehow. Hmmm, meatball subs!


Here's what you need:

Sub buns

Ground beef (or whatever kind of ground meat you want)

Crushed tomatoes

Cheese - Parmesan or mozzarella

Dried oregano


Optional: butter, garlic, salt, pepper, other herbs, egg, breadcrumbs


First off, preheat your oven, about 375

Then, make you meatballs. Put your ground meat in a bowl and mix in whatever you like. You can add some breadcrumbs, and egg, salt, pepper, and whatever spices or herbs that you're feeling. Mix it all up. I usually have about a pound of beef and that makes about 9 meatballs

Then you'll want to cook them. You can do them in the frying pan or you can bake them, whatever you're feelin' go for it.

Now cut your sub buns down the middle and open them up. You can put them in the oven and toast the inside a little bit. Last time I made these I made some garlic butter and brushed it on the inside.

Pour the crushed tomatoes into a pot on medium low. Add a little water to thin it out just a bit. Toss in some oregano. You can add other herbs at this point, if that's your taste. Salt, pepper. Let simmer for about 5 minutes or so. Once the meatballs are done, put them into the pot of sauce. Continue simmering for another 5 minutes.

Take you sub buns out of the oven, put meatballs in (usually 3-4) and top with tomato sauce. Sprinkle on some Parmesan and top with mozzarella. Put those back into the oven just until the cheese is melted. Voilà!
